To eat has become an art in British Columbia, and the chefs have decided that the region has to stand out for its refined cuisine. Thanks to its moderate weather, delicate products are cultivated in the orchards and the cattle enjoy tender pastures. L’École, in Victoria, and Elixir are excellent examples of this exquisiteness. In this occasion we selected two of the best restaurants in Vancouver: Raincity Grill and Cin Cin Ristorante.

Raincity Grill receives in its pleasant atmosphere of bistro with view to the English Bay and its fabulous wine list including the ones of the province. The menu is based in regional products of the season, vegetables, meats and cheeses carefully produced by the artisans, and the salmon is specially fished for the restaurant.

The chef Andrea Carlson recommends us its “100 miles Tasting Menu", that indicates that the products come from places that are within 100 miles radio. According to the season it starts with a shrimp cebiche. vegetable salad, fish, the famous beef Agassiz and a mascarpone cream with rose’s gelatin. All the dishes in the menu are singularized for its freshness, its organic and natural character.

Cin Cin Ristorante has been since its creation, in 1990. very popular, frequented by local people, tourists and famous. Its contemporary Italian cui- sine. created by the chef Mark Perrier, uses a subtle balance between the flavors and the textures. The homemade ravioli, the halibut (grouper) fillet in romesco sauce are delicious, the delicately coal roasted veal Marsala style is a savory dish. And. to finish, the chef Pâtissier Thierry Busset known as the “angel of the cuisine" has created original desserts that play with delicate flavors.

Thanks to these marvelous artists of the cuisine. Vancouver is a city that stands out for its international culinary recognition.
