A Sublime Culinary Experience

Topaz boasts an element that makes it unique: the presence of chef Papa Alain Darc, a man that holds an almost mystical connection with his ingredients. Topaz regularly receives shipments straight from the legendary Parisian Rungis Market, including oysters, milk-fed veal, and, of course, French wines that are treasured in this region. Steaks are paired with potatoes, garlic, and are topped with rosemary leaves; duck confit is roasted in its own fat and paired with seasonal vegetables; salmon is doused with an incomparable white sauce; the star of the show: poached lobster with foie gras paired with butter sauce. If this were to prove insufficient, the wine list is without a doubt one of the most exhaustive and compelling in the region.
